This recipe actually came from a Woman's Day cookbook. Each serving has less than 300 calories...not too shabby. Don't be weirded out by the odd combination of ingredients. They combine for a sweet and savory Mediterranean dish that totally reminds me of the fabulous food we had in Greece.
INGREDIENTS:
1/3 cup white wine
2 tbs. brown sugar
1 1/2 tsp. oregano
3 tbs. red wine vinegar
6 cloves garlic, smashed
1 tbs. capers
1/2 cup prunes
1/3 cup pitted green olives
4 chicken breasts
White or brown rice
Parsley
Serves 4
DIRECTIONS:
Whisk together first 4 ingredients in crock pot. Add garlic, capers, prunes, and olives; mix. Add chicken to crock pot and cook on low for 5-6 hours. Serve with cooked rice mixed with parsley.
TIP: If the prunes aren't your thing, try substituting dried apricots or nectarines.
