Speedy Southwestern Chili
INGREDIENTS:
4 chicken breasts
2 cans tomatoes (garlic and onion flavor)
1 small jar of salsa
1 can corn (liquid included)
2 cans black beans, rinsed
2 cans diced green chilies
1 package ranch seasoning
1 package taco seasoning
For garnish:
Sour cream
Shredded cheese
Lime wedges
Serves 8
DIRECTIONS:
Combine ingredients in crock pot. Cook on high for 8 hours if chicken is frozen. Cook on low for 4-6 hours if chicken is thawed.

TIPS: Once again, I shredded the chicken in the crock pot before serving. This is also delicious served over a bowl of crushed lime flavored tortilla chips or with a creamy tomatillio dressing.
