Recipe #1: Herb Chicken & Potatoes

If I could figure out a way to use a crock pot in all my recipes for the entire Winter I totally would.  I like the comfort of crock pot food and I LOVE how easy it is to prepare.  While I haven't mastered multiple months worth of recipes I have put together 7 little ditties (yep, an entire week's worth) that I think you'll enjoy.

Herb Chicken & Potatoes

INGREDIENTS:
4 carrots, sliced
1 onion, diced
8 small red potatoes, halved
2 chicken breasts
1/2 tsp. salt
1/2 tsp. coarse black pepper
1 tsp. dried basil
1/2 cup white cooking while
Fresh basil for garnish

Serves 4

DIRECTIONS:
Combine ingredients in crock pot.  Cook on high for 8 hours if chicken is frozen.  Cook on low for 4-6 hours if chicken is thawed.


I made sure my vegetables where thoroughly coated with the herbs before adding the chicken and wine.
An uber simple one pot dinner.

TIPS: I simply shredded the cooked chicken in the crock pot before serving (this meant less mess and effort up front).  Garnish with ribbons of fresh basil to help brighten the slow cooked flavors.  This dinner is also good with a drizzle of sweet honey mustard sauce over the top.

Make sure you check back tomorrow for a crock pot chill that's packed with flavor!
